Coconut Macaroons
1 -1/3 cup dessicated coconut(I used sweetened coconut-in which case,reduce the sugar you use)
1/3 cup sugar
2 tbsp maida aka APF
a pinch of salt,
egg whites to moisten the mixture(about 2 egg whites)
1/2 tsp vanilla or almond essence
Preheat oven to 325 degrees F.Mix all the dry ingredients and then add the essence and egg whites.You don't have to knead the mixture.Just make sure everything is wet,and pick up the mixture and roll into gulab jamun size balls.You don't have to press down too much.
Place them on a baking sheet.They don't rise like cake does,,so you can pack them together.Bake for between 18-21 minutes.They should be lightly browned but not burnt.
Let them cool before removing them from the pan,else they stick to it.
